Resolved
Due to the increased load on gp2, we exceeded available IOPS usage. We had to increase disk space and migrate ES to 7.10 to avoid downtime. After we increased the capacity of the gp2 node and increase the IOPS nodes amount, we migrated back to stable ES 5.6.
